Caroline Park is a total star! She’s cooked up this delicious recipe for gluten free chocolate chip cookies. This one’s going to make Caroline a lot of new friends – and you too when you make them!

 

 

 

 

Ingredients

1 cup almond meal
1/2 cup Coconut flour
1tsp baking soda
1 pinch salt
6 tbsp coconut oil
6 tbsp Nut butter
6 tbsp Brown Rice Syrup
A dash of vanilla essence
100g Dark Chocolate
1 beaten egg yoke

 

Method

Step 1.

Mix all the dry ingredients in a bowl

Step 2

Add the Coconut oil, Brown rice syrup and nut butter to a saucepan. Heat gently and stil until it’s all incorporated

Step 3

Once all the ingredients in the saucepan are dissolved, add them to the dry ingredients in the bowl.

Step 4

Mix together in a bowl

Step 5

Break up the chocolate and crush into shards.  Add to the mixture and stir well

Step 6

Add the beaten egg and stir into the mixture

Step 7

Heat the oven to 160 degrees c.  Form the mixture into cookies and place in the oven for 15 to 17 minutes turning half way through

Step 8

Remove from the oven, allow to cool and enjoy!
