Jammy Apple Tarts
These are simple to make and can be enjoyed during the week as a sweet treat during the day or what I like to do is warm some of the through and serve as a dessert with some custard, or ice-cream.Â

Makes:12 tartsÂ
Preparation time:10 minutesÂ
Cooking time: 12-15 minutesÂ
Â
Butter, for greasingÂ
325g/11½oz ready rolled shortcrust pastry Â
12 tsp jam, whichever flavour you like Â
1 apple, peeled, cored and thinly slicedÂ
2 tbsp desiccated coconut or crushed flaked almondsÂ
Icing sugar, to dustÂ

Pre-heat the oven to 200C/180C fan/gas 6.Â
Â
Brush the holes of a shallow patty/bun tin with a little butter.Â
Â
Using a cutter, cut out circles of pastry to fit the holes of a patty tin and lightly press into the holes. Place one teaspoon of jam in each one then lay the sliced apple on top. Scatter over the desiccated coconut or almonds and dust each one with icing sugar. Place in the oven and cook for 12-15 minutes until the pastry is golden, the jam is bubbling and the apple is becoming golden.Â

Carefully remove from the tins while hot and cool on a wire rack. Serve warm or cold, dusted with more icing sugar if you like. Â
