Food editor Sunita Solanki has a delicious spiced salmon recipe that is perfect for Good Friday.
Ingredients
4 fillets of salmon
Handful of coriander
15ml sunflower oil
1 lemon
1/2 tsp of salt
1 tsp salt
1/2 tsp of turmeric
3 tsp of coriander powder
1 tsp garam masala
1 thumb size ginger
6 garlic cloves
2 small green chillies
Method
Step 1.
First add the sunflower oil to a non stick frying pan. Then add the salt, turmeric, coriander powder and garam masala.
Step 2
Peel the garlic and ginger, and blend together with the chilli (The chilli adds heat, so is an optional ingredient) I added a little salt which helps preserve the garlic, ginger, chilli paste if you have any leftover. You can then add the remaining paste to any curry, or marinade you may want to make in the week.
Step 3
Add two tsp of the paste to the frying pan with the other spices. Mix together to form a thick paste enough to coat four fillets of salmon.
Step 4
Then take the salmon, skin side down and coat each fillet with the paste. Cook for 5 minutes on a medium heat, and then turn to cook for a further 10. Once cooked, remove from the heat, garnish with lemon and coriander.
