Quesa-D-Easies

Experiment with different filling options depending on what you like, or what you can get your hands on. You can keep the fillings as simple as some tomato puree, a sprinkle of dried herbs and grated cheese, or something fancy such as brie, onion chutney and rocket. One word of advice though, just don’t fill them too much otherwise they are too difficult to flip over. Here are some of my favourite recipe ideas to get you started…

Quesadillas

Makes: 1  
Preparation time: 5 minutes 
Cooking time: 4-6 minutes 
 
BAKED BEANS AND CHEESE 
 
2 flour or corn tortillas 
approx.150g baked beans 
large handful of grated cheddar or red Leicester cheese 
shake of Worcestershire or Tabasco sauce  
 
CHEESE, CHICKEN AND CORN 
 
2 flour or corn tortillas 
large handful of grated cheddar cheese 
large handful of leftover cooked chicken, torn into small pieces 
2 tbsp sweetcorn 
1 tbsp sweet chilli dipping sauce  
1 tbsp chopped parsley, basil or coriander 
 
CHEESE, AVOCADO AND TOMATO SALSA 
 
2 flour or corn tortillas 
large handful of grated cheddar or Gruyere cheese 
½ ripe avocado, thinly sliced 
2 tbsp tomato salsa 
1 tbsp chopped coriander  
 
Heat a frying pan to a medium heat. Place one tortilla in the pan and top with your chosen fillings. Cover with the second tortilla and cook for 2-3 minutes. Gently turn over and cook for a further 2-3 minutes until the base is golden and the cheese melted.  
 
Transfer to a board and cut into quarters, using a pizza wheel if you have one. 
 
Recipe Extra… 
TORTILLA PIZZAS 
 
This is the quickest easiest pizza that kids (and grown-ups) of all ages will enjoy. 
 
Simply spread roughly 1 tbsp tomato puree or sun dried tomato puree onto a piece of tortilla bread. Scatter over some grated cheddar cheese (half cheddar and half grated mozzarella). Leave plain or add chopped ham, salami, shredded chicken, flaked tinned tuna, sliced olives, sweet corn, sliced onion or halved cherry tomatoes. Don’t add too much or it will be top heavy. Cook in a pre-heat the oven at 220C/200C fan/gas 7 for 8-10 minutes. 
 
PS…It is well worth making one more that you think of these as they will be gone in seconds.
