BBQ Tempeh Stir Fry

Makes 1 bowl

120g tempeh (or tofu if you don’t have tempeh)

1/2 red pepper

100g broccoli

50g mushrooms

5 tbsp BBQ sauce

1 nest noodles

  1. Marinate the tempeh in 2 tbsp BBQ sauce for 3 hours
  2. Cook the noodles as per packet instructions
  3. Heat some oil in a pan and add the tempeh. Fry for 5-10 minutes before adding the mushroom, broccoli and pepper
  4. Fry for a further 10-15 minutes, before adding the remaining BBQ sauce and stirring to combine

I added extra spices on top of my noodles because I like the extra kick, but that’s not compulsory of course!
